    How about a pure vit barbarian? No other stat, just vit, have tons of HP and beat things down with your bare fists.

    This may not be very original but I had a full magic cleric.
    Her heal were great, very powerfull attacks too and loads of MP. b:cool
    Only problem is that later in the game you get AoE mobs ... b:shedtear
    So, I had to add loads of Vitality to her since then. b:sad
    But in the end, she still rocks b:chuckle
