I was just wondering if with how deep the class changes are going will we have to make a new lvl 1 character if we find the changes to our currentl lvl 70 chars to be things we hate etc, or will we be able to change the class of our high lvl chars?

I doubt they would give a free class change. Only a minority of people feel strongly about getting a free class change. With all the classes changing so much, most of these people won't even know what class they would prefer to play. I have five fully decked out toons, I don't even know which ones I will continue playing. I'll probably play a bit with all of them and eventually gravitate towards focusing on one or two.
